Friday’s Recipes: Lois Brown’s Lemon Cookies and Monte Cristo Sandwich

Lois Brown’s Lemon Cookies by CK
FOR COOKIE
1/2 cup butter, softened (1 stick)
3/4 cup sugar
1 egg, beaten
1 Tbsp lemon zest
2 tsp lemon juice
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 2/3 cups flour
1/2 cup milk (whole)
Preheat the oven to 350. Beat the butter and the sugar until they are light and fluffy.Add the beaten egg, lemon zest and juice, mix well.
Mix in the baking powder, soda and salt. Stir until incorporated.Mix in half of the flour and half of the milk. (no need to be exact)
Stir the mixture well, and then add the remaining flour and milk. Drop dough by teaspoons onto an ungreased cookie sheet (you can also use parchment paper). Make these cookies small, about the size of a cherry. This will prevent them from crumbling when you remove them.
Bake at 350 F for 12-14 minutes.
FOR GLAZE
1/4 cup lemon juice
3/4 cup sugar
Heat the lemon juice just a bit in the microwave. Add the sugar and stir to dissolve completely. Place the topping next to the cooling rack with a pastry brush at the ready.
When the cookies come out of the oven, remove them to the rack with a piece of foil placed under it, or if you’ve used parchment paper, just pull the paper with the cookies from the cookie sheet to the rack.
Brush the topping onto the hot cookies. The faster you do this, the quicker it will dry into a glaze.
Sprinkle with powdered sugar (if desired).
NOTES:
Lemon zest can be too strong for some. If you don’t want the cookies to be too tart, you can use just 1 tsp of zest.
Yields approx 4 dozen cookies

Monte Cristo Sandwich by GKT
1 quart oil for frying, or as needed
2/3 c. water
1 egg
2/3 c. flour
1 3/4 tsp. baking powder
1/2 tsp. salt
8 slices white bread
4 slices Swiss cheese
4 slices turkey
4 slices ham
1/8 tsp. pepper
1 Tbsp. powdered sugar for dusting
Heat 5 inches of oil in a deep fryer to 365. While oil is heating, make the batter: In a medium bowl, whisk together the egg and water. Combine the flour, baking powder, salt and pepper; whisk into the egg mixture until smooth. Set aside in the refrigerator. Assemble sandwiches by placing one slice of turkey on one slice of bread, a slice of ham on another, then sandwich them with the Swiss cheese in the middle. Cut sandwiches into quarters, and secure with toothpicks. Dip each sandwich quarter in the batter so that all sides are coated. Deep fry in the hot oil until golden brown on all sides. Remove toothpicks and arrange on a serving tray. Dust with powdered sugar just before serving.
