Friday’s Recipes: Fudge Jumbles and Pear Bread

Fudge Jumbles
2 cups chocolate chips
4 Tablespoons butter
1 can sweetened condensed milk
2 ½ cups flour
1 cup butter
2 cups brown sugar
2 eggs
3 cups oatmeal
1 teaspoon soda
¼ teaspoon salt
Melt together the chocolate chips, 4 T butter and sweetened condensed milk, stirring often. Then mix remaining ingredients together in a large bowl. Press ¾ of the 2nd mixture on the bottom of a jelly roll pan. Spread the 1st mixture over the top and then crumble the remainder of the 2nd mixture evenly over the top. Bake 25 minutes at 325 degrees.

 

 

FRESH PEAR BREAD
3 large eggs, room temperature
1 1/2 c. sugar
3/4 c. vegetable oil
1 tsp. vanilla extract
3 c. flour
2 tsp. baking powder
2 tsp. cinnamon
1 tsp. baking soda
1 tsp. salt
4 c. finely chopped peeled ripe pears (about 4 medium)
1 tsp. lemon juice
1 c. chopped walnuts
In a bowl, combine the eggs, sugar, oil and vanilla; mix well. Combine flour, baking powder, cinnamon, baking soda and salt; stir into the egg mixture just until moistened. Toss pears with lemon juice. Stir pears and walnuts into batter (batter will be thick). Spoon into two greased 9×5 inch loaf pans. Bake at 350 for 55-60 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.
