Friday’s Recipes: Rainbow Beef Cookie Sheet Freezer Meal and Old-Fashioned Southern Butter Rolls

Rainbow Beef Cookie Sheet Freezer Meal 
In a freezer baggie or freezer safe container, add
1 lb stew meat (or roast cut into bite sized chunks)
1 red onion, sliced
1 lb sliced carrots
12 oz bag frozen green beans
2 medium squash, chopped
1 Tbsp salt
1 package dry ranch dressing mix
Mix ingredients together well to ensure that the meat doesn’t stick into a clump. Place container in freezer.

To cook: allow your meal to gently thaw in the frig for 6-8 hours before cooking. Line a cookie sheet with aluminum foil for easy clean up. Onto the cookie sheet, evenly spread meal in a single layer. Bake at 350 degrees for 75 to 90 minutes. If you skipped the thawing in the frig step, add 15-20 minutes of cooking time.
Serves 4-6

OLD-FASHIONED SOUTHERN BUTTER ROLLS by GKT
ROLLS:
2 c. flour
1/2 tsp. salt
1 c. butter, cold
1/2 c. cold water
3/4 c. butter, softened
1/4 c. sugar
1 tsp. cinnamon (more if desired)
MILK SAUCE:
2 c. milk
2/3 c. sugar
1 tsp. vanilla
Preheat oven to 350. Grease a 9×13 baking dish. In a large bowl, mix together the flour and salt. Use a pastry cutter to cut in the cold butter. When you have coarse crumbs, add the 1/2 cup of water; stir. Use your hands to press dough together. Place dough i refrigerator for 10 minutes to make it a bit easier to work. Generously sprinkle your workspace with flour. Roll the dough out into a 12×10 rectangle. Spread the softened butter evenly over the pastry. Sprinkle with 1/4 c. of sugar and desired amount of cinnamon. Roll the dough jelly roll style. Cut into 12 even slices. Place in prepared baking dish. In a small saucepan, heat the milk and remaining sugar just until it begins to boil. Remove from heat and stir in vanilla. Pour mixture over rolls. Bake until browned, about 30-40 minutes.
